Cajun Chicken Pasta!

Ingredients
2 boneless, skinless chicken breasts
avocado oil
Cajun seasoning
12 oz Penne pasta
4 cloves minced garlic
1/2 stick unsalted butter
1 Tbsp tomato paste
1 3/4 cup heavy cream
1/2 cup finally chopped parsley
3/4 cup grated Parmesan cheese
1/2 lemon juiced
In a large pot of boiling water, cook your pasta according to packaged directions.
Butterfly your chicken breasts, then sprinkle generously with Cajun seasoning on both sides.
In a frying pan, over medium high heat, add oil and once shimmering, add your chicken and cook for 4 minutes. Then flip and cook until internal temp reads 165f. Next add butter and once melted, add garlic and cook until fragrant about 1 minute. Then add tomato paste and cook for 1 minute until lightly caramelized. Next add your cream and Cajun seasoning. Let simmer for 3 minutes. Then add lemon, Parmesan cheese and parsley. Season to taste with salt. Lastly, add your pasta. Stir to evenly coat. To plate, add your pasta to a bowl. top with your sliced chicken and garnish with parsley. Enjoy!
