California Chicken Salad:
Ingredients
Boiled and chopped chicken 2 cups
Cheddar cheese grated ½ cup
Cottage cheese grated ½ cup
Olives chopped 4 tbsp
Tomatoes 2 remove seeds chop in cubes
Cucumber 2 chopped in cubes
Capsicum 1 chopped in cubes
Sweet corn 1 cup
Sun dried tomatoes minced 2 tsp
Pasta boiled 2 cups any shape
Ingredients for Dressing
Mayonnaise 1 cup
Cream ½ cup
Chili powder ½ tsp
Garlic powder ½ tsp
Black pepper ½ tsp
Green chilies chopped 2
Sweet chili sauce 3 tbsp
Siracha sauce 2 tbsp
Corn chips to serve
Honey ¼ cup
METHOD
Mix all the ingredients together, mound in two decorated serving dishes and one in a large salad bowl, sprinkle with corn chips and serve.
Rose Lemonade:
Ingredients
Rose drink 2 tbsp
Water 2 cups
Rose water ¼ cup
Lemon juice 2 tbsp
Crushed ice 1 cup
Any white drink 250 ml
Rose petals optional
METHOD
Blend all together except rose petals, serve in tall glasses with rose petals on top.
Chicken Hearts:
Ingredients
Boneless chicken mince 300 gm
Bread slices 8 cut into hearts
Green chilies 1 tsp heaped grinded
Bread crumbs as required
Sesame seeds 2 tbsp
Crushed red pepper 1 tsp
Salt 1 tsp
Black pepper 1 tsp
Garlic 1 tsp
Egg 1
METHOD
Chopperize chicken mince well with all the seasonings until smooth, cut bread with heart shape cookie cutter, coat one side with chicken mixture, dip in egg, roll in crumbs and sesame seeds mixture, deep fry.
