Ingredients:

Grated carrot – 1 ½ cups
Milk – 3 cups
Sugar – ½ cup
Cardamom – 4
Cashews – few
Almonds – few
Ghee – 2 tbsp

Method:

In a pan, add a tbsp of ghee, add a few cashews and fry until golden. Keep them aside. Add one more tbsp of ghee. Add the carrot and fry for 5 minutes. Add 5 cashews and almonds and fry for a minute. Add a cup of milk, a pinch of salt and mix. Cover and cook for 5 minutes. Take a cup of mixture along with the cashews and almonds and grind into a paste. Add 2 cups of milk to the remaining carrot. Bring it to a boil. Let it cook for 5 minutes. Add the ground paste, sugar and mix. Add cardamom, fried cashews and mix everything together. Serve the kheer hot or cold.
