This Chicken curry is from the Chettinad Recipes which is made by using freshly prepared Chettinad masala. Always fresh masala will give the best taste to the curry compare to other store masalas. The preparation of this masala is very easy and all the ingredients are always available in our kitchen. So let’s cook and enjoy Chettinad Chicken Curry Now… 

Ingredients for Masala
Cinnamon – Small pc
Star anise – 1
Cardamom – 2
Cloves – 4
Coriander seeds – 1 tbsp.
Anise – 1 tsp.
Cumin seeds – 1 tsp
Pepper Corns – 1 tsp
Dry Red Chilies – 4
Grated Coconut – Small cup – 1

Ingredients for Curry:
Oil – 2 tbsp.
Bay leaves -2
Small Onion – 1 cup
Ginger Garlic paste – 1 tsp.
Tomato Medium – 2
Turmeric powder – ¼ tsp.
Salt – 1 tsp. or as per taste
Curry Leaves
Chicken – ½ kg
Chilli Powder – 1 tsp.

Preparation Method.

1. To make Chettinad masala dry roast cinnamon, star anise, cloves, cardamom, coriander seeds, Cumin, Anise, Pepper, and dry red chilies for 2 minutes. Then add grated coconut, roast it until the coconut turns a roasted color.
2. Once cools down transfer this to a mixie and grind it as a fine powder.
3. To prepare Curry heat some oil in a pan, put bay leaves then add a cup of a small onion and fry it.
4. Once the onions are translucent add ginger garlic paste, finely chopped tomato, and sauté for 2 mins.
5. Add turmeric powder, Curry leaves salt, and Chettinad masala and mix it once.
6. Add required water and cook for 3 mins.
7. Then add the chicken pieces mix and cook for 10 minutes on medium heat.
8. Once the chicken is thoroughly cooked add some chopped coriander leaves for garnishing and turn off the stove.
