Instagram https://www.instagram.com/shaheentsyed/ Facebook https://m.facebook.com/pages/cook-with-shaheen-syed/954850951227256a Twitter https://mobile.twitter.com/cookwithshaheen Chicken angara gravy recipe for detailed video click on the link given below??? https://youtu.be/Bk6DnRotiPg Ingredients 600 grams mutton 2 medium to big onions sliced 2 big tomatoes 2 tbsp ginger garlic paste 300 grams yoghurt 2 tbsp fresh cream or milk cream 1 tdp orange red food colour (optinal) 1 tbsp red chilli powder (medium spicy) 1 tsp turmeric salt to taste Spice mix powder 4 to 5 dried red chillies (preferably kashmiri will impart good colour) 1 tbsp coriander leaves 1 tsp cumin seeds 4 cloves 3 cardomons 1 small piece of star anise few peppercorns 2 small sticks of cinnamon Method Mix chicken with yoghurt ginger garlic paste milk cream red chilli powder turmeric salt amd orange red food colouring till all ingredients are well combined Then place a silver foil on the chicken keep a red hot burning coal on the foil sprinkle few drops of oil or ghee the coal will start to smoke cover lid and set aside for atleast 2 hours for marination Dry roast dried red chillies coriander seeds cumin seeds cloves cardomons cinnamons peppercorns star anise for just a minute or two till they start exuding an aroma Then remove from heat cool completely and grind into very fine powder Heat oil fry sliced onions till brown drain remove cool and crush or grind to a fine powder Grind the tomatoes too into a fine puree In same oil in which we had fried onions add the marinated chicken mix well bring to a boil on high heat then cook on high flame for atleast 5 minutes covered After 5 minutes add pureed tomatoes crushed or ground fried onions and the spice mix powder which we had prepared earlier Mix well bring to a boil cover and simmet 30 minutes or till chicken is tender Then open and check if consistency is too thick i can add little water and boil once then remove from heat Again give coal smoke just like we had given while marinating chicken open lid after 10 minutes Serve hot with naan tandoori naan paratha and fried rice or tempered rice Take care jazak allah khair
