How To Make Chicken Biryani
Chicken biryani is the perfect classic pairing that has invaded culinary culture all around the world. The boiled rice forms fluffy layers with vibrant colours surrounded by cuts of succulent chicken that are bursting with flavour from the array of spices and herbs. It is an aromatic and fragrant dish loaded with spicy chicken, fried onions and flavourful saffron rice that tastes so good that it can still be served up even a few days later.
My chicken biryani recipe will help you to turn a challenging and demanding dish to a meal so simple to make that you will want to make it time and time again. If you ever need some dinner inspiration, then chicken biryani is the choice to make.
Ingredients:
– 100ml Olive Oil
– 2 Bay Leaves
– 1 tsp Black Peppercorn
– 5 Pieces Cinnamon Sticks
– 1 tsp Cloves (Laung)
– 3 Black Cardamom Pods
– 10 Green Cardamom Pods
– 1kg Chicken
– 2 Onions
– 3 Tomatoes
– 2 tsp Garlic Paste
– 2 tsp Ginger Paste
– 2 tsp Garam Masala
– 2 tsp Chilli Powder
– 1 tsp Black Pepper
– 2 tsp Turmeric Powder (Haldi)
– 1 tsp Salt
– 4 Potatoes
– 100g Yoghurt
– 1 tsp Cumin (Jeera)
– 4 Green Chillies
– Fried Onions
– Coriander
– 500g Boiled Rice (80% Cooked)
Method:
1. Heat the oil in pan
2. Add bay leaves, peppercorn, cinnamon, cloves, cardamom, cardamom seeds and allow to roast for a few minutes
3. Add the chicken, diced onions and chopped tomatoes and mix
4. Cook for a few minutes before adding ginger paste, garlic paste, garam masala, chilli powder, black pepper, turmeric powder and salt
5. Mix all the spices and ensure they are evenly combined and cook for 5-10 minutes
6. Peel potatoes and cut into bite-size chunks then add into pan and cook for 10-15 minutes
7. Add yoghurt and mix before cooking for 10-15 minutes
8. Add cumin, green chillies, fried onions and coriander and mix
9. Add the boiled rice into the mixture – rice should only be 80% cooked as it will cook further in the pot
10. Top with fried onions and chopped coriander then lower heat and leave to cook for 10-15 minutes
11. Mix the spices, chicken and rice together- ensure that you mix slowly so as not to mush the rice
12. Serve immediately on its own or alongside some raita!
