Biryani is a mouth- watering whole meal which is perfect for all occasions. It is apt to suit from dinner parties to a lazy Sunday meal. Chicken Biryani is popular across India. Biryani can be made with meat, chicken, fish, egg and vegetables all are simply delicious. But Chicken Biryani is one of the most popular one out of these.

Ingredients: –
For Biryani Rice –
Basmati rice 2 cups (250 grams)
Water 3 cups
Green cardamom 2
Cloves 4
Salt 2 tsp
Ghee 1 tbsp
For Chicken Marinate –
Chicken 750 grams
Curd 4 tbsp
Onion 1 medium size (sliced & fried)
Ginger 1 inch (for paste)
Garlic 20 cloves (for paste)
Garam masala powder 1 tsp
Salt 1 tsp
Red chili powder 1 tsp
Kewra water ½ tbsp
Sunflower oil 1 cup
Other ingredients –
Potato 1 medium (cut into 2)
Egg 2 (hard- boiled)
Saffron 6 strands
Lukewarm water ¼ cup
Milk 1 cup
Ghee 2 tbsp
Lemon juice 1 tbsp
Garam masala powder 1 tsp
Khoya or mawa ½ cup
Fried onion ½ cup
Preparation: –
Step 1
At first, soak basmati rice for 30 min. Then slice onion. Now heat oil in a kadai and fry onion until it turns golden. Then make a smooth paste with 1-inch ginger, 20 pieces garlic, ¼ cup water and keep it aside. Now boil eggs and shell the eggs. Then boil potato and marinate boiled potato with salt, red chili powder. Fry marinated potato until golden.
Step 2
In a large bowl, marinate chicken pieces with curd, fried onion, ginger- garlic paste, garam masala powder, salt, red chili powder, kewra water and mix well. Then keep aside for 2 hrs.
Step 3
Then soak few saffron strands in warm water and keep aside.
Step 4
Now heat oil and fry marinated chicken pieces. Cook for 10 min on the low flame. If water is required, then add ½ cup water now. Cook for 10 min again. Now Chicken is ready. Then separate chicken pieces from the gravy and add milk in the chicken gravy.
Step 5
Then boil 3 cups of water in a large pot. Now add green cardamom, cloves, salt, ghee and soaked & washed rice. Cook until rice is 50% done. Now rice is ready.
Step 6
Then take a bowl. Keep the chicken pieces in the bowl and keep the chicken gravy in a separate bowl. Now add milk in the chicken gravy and mix well.
Step 7
At first, make 1st layer with lemon juice, garam masala powder, chicken gravy, ghee, chicken pieces, fried potato, fried onion, a pinch of garam masala. Then make 2nd layer with cooked rice, saffron water, khoya. Now make 3rd layer with rest amount of cooked rice, eggs, saffron water. Then spread warm saffron water on the top.
Step 8
Then cover the pot and seal with aluminium foil or atta dough. Now cook on medium flame for 10 min. Then cook on low flame 25 min. Once done, switch off the flame and keep it for another 15 min.
Now it is ready to serve. Enjoy!
