Chicken Cafreal is a Goan delicacy brought in by the Portuguese from Mozambique. The dish originated from a dish called Galinha. Chicken Cafreal is an integral part of Goan cuisine and is enjoyed on feasts and festivities along with friends and family. The delicacy is best enjoyed with the local bread called ‘Poi or Pav’ along with a glass of Port wine or Cashew Feni or Beer.
Ingredients:
1) 500 gms chicken (big pieces)
2) 2 large potatoes
3) 6 teaspoon vegetable oil
4) For the marinade
1 bowl fresh coriander leaves
6-7 cloves of garlic
2-inch ginger
1 teaspoon salt
1 teaspoon vinegar
1/2 teaspoon cumin seeds (jeera)
1 teaspoon black peppercorns
5-6 cloves
2-3 chilies
Procedure:
1) Prepare the marinade by blending all the ingredients for the marinade
2) Marinate the chicken pieces for 1 hr
3) Fry the thick potato slices until golden
4) Fry the marinated chicken pieces until caramelized at the surface. Save the marinade
5) Dilute the marinade in a cup of warm water and cook for another 20 mins until the water dries out
6) Serve along with the fried potato slices and a basket of poi
