We already made beef caldereta (https://youtu.be/Y_pasd2FDUU), this time it’s Chicken Caldereta recipe.
The ingredients are almost the same as that of beef mechado (https://youtu.be/s7QihiIsuM8) and also of chicken afritada (https://youtu.be/bQ9FraDvhrE). What makes it different is the addition of liver spread and Parmesan cheese in this recipe for a richer and thicker sauce.
This is also easy to cook and very delicious. You can also add this to your holiday menu and it will be worth it.

Ingredients:
* 1kg chicken parts
* 5 garlic cloves, minced
* 1 medium onion, chopped
* 2 medium potatoes, cut into wedges
* 1 large carrot, cut into wedges
* 2 small red bell peppers, sliced
* 450g tomato sauce
* 1/2 tsp salt
* 1/4 tsp ground black pepper
* 1/4 tsp cayenne pepper
* 1 small can liver spread
* 1/3 cup Parmesan cheese
* 1 chicken cube
* cooking oil
Procedure:
1. Cook carrots and potatoes until lightly browned. Set aside.
2. Sauté garlic and onions.
3. Combine the chicken. Put salt and ground black pepper. Mix and simmer.
4. Add tomato sauce, chicken cube, and cayenne pepper. Stir.
5. Pour water and mix. Let it simmer.
6. Add the liver spread and Parmesan cheese. Blend well.
7. Taste and adjust if needed. Add the cooked carrots, potatoes, and bell peppers. Mix well. Simmer again.
7. Check and mix for the last time. Turn off the heat.
8. Serve with steamed rice. Enjoy!
