To make Chicken Chettinad, we need:

Ingredients (for marination):
400 gms curry cut chicken
1/2 Tsp turmeric
Salt to taste
1/4th Tsp red chilli powder
1 Tbsp lemon juice

Ingredients (for Chettinad Masala):
1 Tsp refined oil
1 Tbsp coriander seeds
1 Tsp fennel seeds
1/2 Tsp cumin seeds
1/2 Tsp peppercorns
4 dry red chillies
1 green cardamom
1 black cardamom
1 inch cinnamon stick
1 blade of mace
4 cloves

1 star anise
1 bay leaf
6 garlic cloves
1inch ginger roughly chopped
1/4th Tsp fenugreek seeds
1/4th cup grated coconut
Water as required for blending

Ingredients (Chicken Chettinad)
2 Tbsp refined oil
1 cup chopped shallots
12 curry leaves
Puree of 2 medium tomatoes
Marinated chicken
Chettinad Masala
1& 1/3rd cups water
1/2 Tsp turmeric
Salt to taste

Method:
In a bowl, add all the ingredients mentioned under marination into the chicken. Mix well and keep it aside for an hour.

Heat up 1 Tsp oil in a frying pan and add all the whole spices mentioned under chettinad masala except the fenugreek seeds. Stir for 2 minutes, then add garlic cloves. Saute till the spices start changing colour. Add ginger and fenugreek seeds. Stir for a minute and switch off the flame. Transfer the mixture into a blender jar. Now stir and roast the grated coconut in the same pan till it turns brownish. Transfer it into the same blender jar. Add little water and blend it into a smooth paste.

Heat up 2 Tbsp oil in a kadhai and add shallots and curry leaves. Saute till shallots turn translucent. Add marinated chicken. Stir and fry for 6-7 minutes. Add tomato puree. Saute till the puree starts leaving oil from the sides. Add prepared chettinad masala. Most x well and saute for 6-7 minutes. Add water salt and turmeric. Mix well and cover and cook for 15 minutes. After 15 minutes, remove cover and stir once. Chicken Chettinad is ready.
