Ingredients:
Chicken 1kg
Onions 2 big chopped
Ginger 1 pc
Garlic 6 cloves
Tomato 2 chopped
Capsicum/bell pepper 1
Turmeric Powder 1 tsp
Coriander powder 2 tsp
Red chilly powder 3tsp
Tomato Ketchup 3tbsp
Fennel seeds
Curry leaves
Salt
Oil
Method:
1. Cut the chicken into small pieces. Marinate with 1/2 tsp turmeric powder, coriander powder, red chilly powder, 2tsp crushed ginger and garlic, salt and keep refrigerated for 30 mins
2. Heat oil in a pan and fry the marinated chicken until almost done.
3. Drain the excess oil and in the same oil add fennel seeds, curry leaves, ginger garlic crushed and saute onions with salt until transparent, don’t overcook those onions since we need it crisp.
4. Add chopped ginger, garlic, green chilies and saute again for a minute.
5. Add tomato into this and saute again we don’t need the tomatoes to be overcooked as well it must remain as big pcs.
6. Add bell pepper/capsicum to this
7. Add the fried chicken into this. Add ketchup and mix well.
8. Cover and cook for 3-5 mins.
9. Serve hot with chapattis, khubus, nan… 🙂
