Ingredients:
3 lemongrass stalks
1 bulb of garlic
12 kaffir lime leaves
2 cans of coconut milk
Shrimp paste
1/4 cup of tablespoon of chicken bouillon
1 cup of star anise
3 small pieces of tumeric
1 cup of fish sauce
1/2 cup of sugar
10-15 red chilies
2 red onions
3 large potatoes
1 1/2 lb of whole bamboo
Chicken feet
3 packs of rice vermicelli
1 lb of liver
1 lb of chicken gizzards
1. Let the red chilies soak in water until soft for 20 minutes
2. Wash chicken and chicken feet with water
3. Chop the lemon grass, galangal, tumeric, garlic, add a bit of water and blend
4.Blend the chili peppers with water and mix in with the blended mix earlier
5. Chop up the chicken in pieces, chicken feet, liver, and chicken gizzards
6. Pour curry paste mix into a large pot with the meat and let cook for 10 minutes
7. Boil rice noodles until soft, drain, and rinse with cold water
8. Add in the other seasonings and let simmer
9. Serve with rice noodles, veggies, and soup
