Chicken dum biryani is a ever green classic that needs no introduction in parts of countries like Persia, India and others! Dum biryani is goodness of rice and meat that comes in layers! Layers of rice and meat cooked with rich and finger licking good masala in it’s own steam pressure until rice is fluffy and meat cooked just to perfection. A lengthy cooking process but all totally worth it! Trust me!

INGREDIENTS :
For biryani rice :
BASUMATHI RICE – 400g
BAY LEAF – 2No.
CARDAMOM – 2No.
GREEN CHILLI – 3No.
CINNAMON – 2piece
PEPPER CORNS – 4-5 No.
STAR ANISE – 1No.
CUMIN – 1/2tsp
OIL – 1tsp
SALT – 1tsp

For biryani gravy :
CHICKEN – 600-700g
CURD – 1/4th cup
TURMERIC – 1/2tsp
SALT – as per taste
OIL – 3-4tbsp
ONION – 2No.
APPLE TOMATOES – 2No.
GREEN CHILLI – 4-5No.
FENNEL SEEDS – 1/2tsp
GINGER GARLIC PASTE – 1tbsp
CHILLI POWDER – 1.5tsp
CORIANDER POWDER – 1tsp
GARAM MASALA – 1/2tsp
CUMIN POWDER – 1/2tsp
WHOLE GARAM MASALA – Bay leaf, cinnammon, clove, cardomom, star anise, marathi moggu
Fried onions – 1-2tbsp

For dum preparation :
Cooked rice
Biryani gravy
Fried onions
Mint leaves
Coriander leaves
Food colour (optional)
Ghee
