Last Sunday was our ‘Biryani day’.. as I cooked a scrumptious CHICKEN DUM BIRYANI❤ in full mood and enjoyed evry bit of cooking process?
I love the fact about Dum biryanis is that u can Marinate the Chicken a night before, Next day..Just Boil the Rice(Semi cook), Layer the Biryani.Put it on dum..and voila!?
Here are the INGREDIENTS:
For Marinating Chicken:
750g Chicken
2-3 small Bay leaves
2 small Cinnamon
1 Black cardamom
1 Green cardamom
1/2 Tbsp Cumin
5-6 Black pepper
5-6 Cloves
1 Star anise
2 Tbsp Ginger Garlic paste
6-7 Green Chillies (Slitted)
200g Tomatoes (finely chopped)
3 Potatoes (Slightly fried)
1 Cup Fried Onions (400g)
100g (1/2 Cup) Fried Onion Oil
1/2 Cup Chopped Mint and Coriander
2 Tbsp Kashmiri Red chilli Powder
1 tsp Turmeric powder
2 Tbsp Corianderpowder
1 Tbsp Garam Masala powder
1/2 tsp Mace powder (Javitri)
1/2 Tbsp Kasuri methi (optional)
1 Tbsp Salt (or according to your taste)
250g Yogurt (whisked)
1 Tbsp Lemon juice
1/2 Cup Water
For Cooking Rice:
3 Glass/800g Rice (Washed n Soaked for 45mins)
6-7 Glass Water
2-3 Bay leaves
2 Cinnamon
1 Black cardamom
2 Green cardamom
1 Star anise
1/4 Mace Flower
1 Nutmeg
5 Black pepper
5 Cloves
1 1/2 Tbsp Salt (or to taste)
1/2 Lemon juice (with peel)
2 tsp Oil
For Layering:
Fried Onions
Chopped Coriander and mint
Lemon juice mixed with orange food colour
Roasted Cumin powder (optional)
3-4 Tbsp Fried Onion Oil
Some Drops of Rose water
For Garnishing?
Some Fried onions and chopped coriander.
P.s- Add Spices according to your taste!
