Black sauce Ingredients
1 to 2 cups of water
6 dried Ancho/Pasilla chiles
2 to 4 garlic cloves
1/4 onion
1 Tbsp Mexican Oregano
5 pieces of pimienta Gorda or 1/2 tsp allspice
1/2 tsp black pepper, coarse
1 bay leaf
3 cloves or 1/4 tsp clove powder
1 tsp coarse salt (adjust to taste)
2 Tbsp fresh corn masa or 2 Tbsp Maseca
– Spice lovers add 4 chiles de arból or more for extra extra heat!
Instant pot chicken ingredients
Cook with poultry setting
3 to 7 pieces of chicken breast or a whole chicken
1 1/2 Tbs chicken bouillon (adjust to the bouillon of choice)
1/2 blended black sauce
1/2 cup water (extra for more sauce)
Views Jalapeño chili oil rice
2 cups Long grain rice (works great with other rice too )
3 3/4 cups water (follow directions on rice package)
3 to 4 Tbsp views Jalapeño chili oil

Savory salsa
2 ripe tomatoes
1/2 onion
1 Anaheim pepper or choice of green pepper
1 tsp coarse salt
Topping options- Cotija cheese + Lime and ? Boom Done!
* You can save the sauce for 3 days in the refrigerator for later use
* This works great as a marinade add 1 Tbsp of oil (your choice)- Marinade overnight
* Freezes and defrost well
