CHICKEN KONDATTAM – It’s a beloved chicken recipe in Malabar region which is very spicy and delicious. You can explore a detailed chicken kondattam recipe here.
CHICKEN KONDATTAM has unique flavor, it is a boneless chicken pieces marinated in a spicy mixture, deep fried and sautéed in some flavorful ingredients. Hope you enjoy!
INGREDIENTS:
For Marination:
– Boneless chicken pieces 300gms
– Turmeric powder 1tsp.
– Chilli powder 1tsp.
– Cumin powder ½ tsp.
– Pepper powder 1tsp.
– Ginger garlic paste 2tsp.
– Coriander powder 1tsp
– Garam masala ½ tsp.
(Can you readymade chicken masala)
– Salt as required
– Lemon juice 1tbsp.
Before frying:
– Marinated chicken
– Rice flour 2tbsp
– Cornflour 2tbsp
– Egg 1 no
Oil for deep fry
For tempering:
– Coconut oil 2tbsp
– Dry chillies 7no’s
– Garlic 7 cloves crushed
– Shallots 15 no crushed ( I chopped here)
– Onion 1 cubed
– Cashews 10 halved
– Tomato paste 1tbsp
(Usually, they added red chilli paste here I replace with tomato, to adjust the taste balance) if you prefer chilli paste you can add without hesitating)
– Hot chilli sauce ½ tsp
– Tomato ketchup 1tbsp
– Coconut grated 5tbsp
– Red chilli flakes 3tsp.
SUGGESTIONS:
• Finally add some curry leaves and coriander leaves.
• While tempering I didn’t add salt, becoz sauces are already having that. If you feels adjust that suits your taste.
• Before adding a fried chicken, if the sauces are too dry sprinkle some water and then add the chicken otherwise it willn’t coat properly.
• This recipe tastes really super spicy hot. If you can adjust based on your preferences.
