Ingredients:
Chicken Maharani Masala Powder:
Cumin Seed – 1 tsp
Fennel Seed – 1 tsp
Coriander Seed – 1 tbsp
White Sesame Seed – 1 tsp
Black Peppercorn – 1 tsp
Green Cardamom – 3 pods
Cloves – 4 pods
Red Chilli – 2 Medium Size
Mace – 2 Arils
Onion-Cashewnut Paste:
Onion Chopped – 3 Medium Size
Cashewnut – 50 gms
Chicken Maharani:
Bone Chicken Chopped – 500 gms
Bay Leaves – 2 Medium Size
Cinnamon – 1 Medium Stick
Turmeric Powder – ½ tsp
Ginger-Garlic Paste – 1 tbsp
Salt – 1 ½ tsp
Green Chili – 5 Medium Size
Chicken Maharani Masala Powder – 1½ tbsp
Curd – 100 ml
Kasuri Methi – 2 tbsp
Fresh Milk Cream – 3 tbsp
Water – 50 ml
Preparation:
1. Wash the chopped bone chicken thoroughly and keep aside in a bowl.
2. Heat the tawa in a medium flame. Add cumin seed, fennel seed, coriander seed, white sesame seed, black peppercorn, green cardamom, cloves, red chilli and mace. Roast for 3 minutes. When aroma odours, turn off and let it cool.
3. Transfer it to mixie jar. Blend it into a fine powder. Chicken Masala Powder is ready.
4. Heat the tawa in a medium flame. Add chopped onion and cashewnut. Blend it into a smooth paste.
5. Heat the tawa in a medium flame. Pour edible and heat well. When the oil is hot, add bay leaves and cinnamon and cook for a minute. Now add onion-cashewnut paste and saute for 3 minutes till it makes a partial gravy consistenty. Add turmeric powder, mix well and cook for 3 minutes.
6. Add salt, chicken maharani masala powder and mix well. Saute for 3 minutes. Add water, curd and mix well.
Now add bone chicken chopped and mix well. Close lid to cook for 20 – 25 minutes.
7. Open Lid and the chicken is fully cooked. Now add green chilli, kasuri methi and cook for 3 minutes. Now add fresh cream toppings and cook for another two minutes. Chicken Maharani is ready.
Chicken Maharani is a best side dish for Roti, Naan, Chapathi, Paratha or Pulao.
