Chicken Malai Cutlets Chaat
Ingredients for Chicken Malai Cutlets:
Boiled and Mashed Potatoes ½ Kg
Boiled and Shredded Chicken ¾ cup
Mayonnaise 2 tbsp
Green Chili Paste 2-3 green chilies
Shredded Cheese 2 tbsp
Salt 2 tsp
Chicken Powder 1 tsp
Green Coriander ½ bunch
White Pepper powder 1 ½ tsp
Cumin Powder ½ tsp
Eggs 2
Bread Crumbs as per requirement
Oil for frying

Ingredients For Chaat:

Cutlets 4
Boiled chickpeas 2 cups
Chaat masala 2 tsp
Yogurt 1 cup
Salt ½ tsp
Salt to taste
Tamarind pulp 2 tbsp
Tamarind chutney 4 tbsp
Sweet tamarind chutney 2 tbsp
Crispy papdi ¾ cup
Sev As per taste
Green chilies As per taste
Green coriander As per taste
Chopped onions 1
Tomatoes As per taste
Oil 2 tbsp
Gram flour 1 tsp heaped
Cumin ½ tsp

METHOD FOR MALAI CUTLETS:
• In a bowl of mashed potatoes add chicken, mayonnaise, green chili paste, shredded cheese, chicken powder, green coriander, and white pepper, salt and cumin powder. Mix everything together.
• Now make cutlets out of it, roll in bread crumbs and dip in eggs.
• In the end, fry the cutlets until it is golden brown.

METHOD FOR CHAAT:
• Heat oil in a pan, add cumin.
• Now mix the gram flour and sauté for a while.
• Then add chickpeas and tamarind pulp, and allow it to cook until it is thick.
• Add in green coriander to the wok mixture.
• In a bowl add yogurt and salt; whisk it until smooth.
• In a serving bowl place two malai cutlets, sprinkle some chopped onions, add in some chickpea mixture that you have prepared earlier, whisked yogurt.
• Garnish it with some green coriander, green chilies, chopped tomatoes, and chopped onions.
• Finally top it off with some sweet tamarid chutney, crispy papdi and sev.
