Chicken Mandi is a very famous Arabic dish made using Chicken which is cooked only by steaming then along with smoky flavoured rice
METHOD
1.First we need to make Mandi spice powder,for this we need to grind few ingredients
Coriander seeds – 2 teaspoon
Cumin seeds – 1 teaspoon
Cloves – 10
Black peppercorns – 1 teaspoon
Fennel seeds – 1/2 teaspoon
Cinnamon sticks – 4 small
Cardamom – 8
Black cardamom – 1
Nutmeg small piece – 1
2.Grind into fine powder and add it to a bowl,keep 1 teaspoon aside
Then to this bowl add
Salt
Paprika powder / red chili powder – 1 teaspoon
Lemon juice – 2 teaspoon
Chat masala – 1/2 teaspoon
Ginger powder – 1 teaspoon
Olive oil/vegetable oil – 1 teaspoon
Saffron water half (soak 4 strands saffron in half a cup of water)
Mix it well
Mandi spice masala is ready
3.Now we need a full chicken without or with skin, cut it into four parts, now apply this masala paste to the chicken pieces and marinate for 2 hours
4.Wash and soak basmati rice in water for an hour, here I have taken 500 gram basmati rice/3 glasses
5.Next we need to make a steamer setup as shown in video, add water to the vessel – 1 and half litre and on it place strainer and on it place marinated chicken and cook under steam till chicken turns tender, save the stock for cooking rice
6.Then fry the steamed chicken in 2 tablespoon oil, keep it aside
7.Fry few almonds,cashew nuts and raisins in clarified butter
8.In a pan heat oil – 2 tablespoon
To it add chopped onions – 1 medium sized and saute, then add diced green chilies – 2 saute it
Then add the spice powder, salt and add chicken stew – 61/2 glasses
9.When water boils add soaked rice in it and cook till done, then add saffron water in it and place chicken pieces
10.Now give the rice and chicken charcoal smoke, Mandi is ready
11.Garnish Mandi with fried onions, fried nuts, coriander leaves etc
12 . Serve hot with Mandi chutney
