Here’s a little something different this week – a quick summer recipe that can be made with plenty of variations. It is super tasty and fresh, and it won’t leave you feeling super heavy or sluggish. This dish would be great for a picnic, too, and it makes excellent leftovers. Hope you love it!!!
Ingredients:
Quinoa
Chicken
Coconut Oil
Red Onions
Cucumber
Cherry Tomatoes
Parsley (I prefer the flat leaf Italian variety)
Lemons
Olive Oil
Feta Cheese
Sea Salt
