CHICKEN SHAMI KABAB RECIPE:
INGREDIENTS:
-Chicken 4 1/2 kg
-Split bengal gram (washed & soaked overnight) 1 kg
-Salt 2 tbsp or (as per taste)
-Turmeric powder 1/2 tsp
-Green chilli 5 chopped
-Onion 2 (large size)
-Fresh corriander leaves 5 tbsp
-Fresh mint leaves 5 tbsp
-Ginger 4 pieces (cut it into 2 inch slices)
-Garlic cloves 25-30 pieces
-Green chilli 5
-Chilli flakes 2 1/2 tbsp
-Corriander powder 1 1/2 tbsp
-Cumin seeds 1 1/2 tbsp
-Cinnamon stick 3, Black cardammom 3, Black pepper 25, Cloves 15
PROCEDURE:
-In a cooking pot add chicken and split bengal gram in it and then pour 3 litre of water , then add onion, ginger and garlic cloves in it
-Add salt,chilli flakes,turmeric powder,whole garam masala,cumin seeds and coriander powder and green chilli
-Let it cook for about 45 minutes till water has evaporated and chicken is tendered.
-Now discard the chicken bones and after that take out all the spices which have been cooked like
cinnamon stick,black pepper,cloves,black cardamom then add boneless chicken into it , mix it well ,
switch off the flame ,let it cool down and then grind it with mortar & pestle / grinder / chopper machine.
-Then add 5 tbsp of fresh coriander leaves , 5 tbsp of fresh mint leaves and crushed green chilli mix it well
-Make into shape of kabab ( Can be stored up to 1-2 months in freezer)
-Now dip kabab into egg and shallow fry in the cooking oil .
-Chicken Shami kabab is ready to serve, Enjoy it 🙂
