Ingredients:
Chicken – 1kg
Potato – 1 medium
carrot – 1 pc
ginger – 1tbsp
garlic – 11/2 tbsp
green chillies – 8 pcs
big onion
first/thick coconut milk – 3/4 cup
second/thin coconut milk – 11/2 cup
pepper powder
garam masala
cardamom
cloves
pepper
cinnamon
star anise
curry leaves
coconut oil
salt to taste
Method of preparation:
Heat oil in a kadai and add the crushed spices ( pepper, cloves, cinnamon, star anise, cardamom). Then add garlic, ginger, curry leaves and green chillies and saute till the raw smell is gone, add sliced onions, salt and saute the onions lightly not golden brown. Add pepper powder, potato, carrot stir well and add the chicken pieces. Then pour the second coconut milk. Cook the chicken in the stock with second coconut milk for about 20 minutes. Sprinkle pepper powder, garam masala, add first coconut milk, green chillies, curryleaves and finally coconut oil for an authentic flavour. Keep the dish closed for 10 minutes before serving. Enjoy the Christmas special chicken stew with appam, bread, idiayappam.
