Chicken Tikka Pasta Platter Recipe
Ingredients for Tikka Masala:
Black peppercorns 1 tsp
Cloves 1 tsp
Cumin seeds 1 tbsp
Coriander powder 1 tbsp
Black cardamoms 3
Green cardamoms 2
Cinnamon sticks (1 inch) 3-4
Red chili powder 1 tbsp
Salt 1 tbsp
Turmeric powder 1/2 tbsp
Paprika powder 1/2 tsp
Orange food color a pinch

Ingredients for Chicken Preparation:
Chicken boneless (cube cut) 1 kg
Oil (for marination) 1 tbsp
Tikka masala 3 tbsp
Yogurt 1 cup
Oil (for cooking) 2 tbsp

Ingredients for Mayo Sauce:
Mayo 1 cup
Chili sauce 2 tbsp
Cream 1/2 cup
Sriracha sauce 1 tbsp
White pepper powder 1/2 tsp
Salt 1/4 tsp

Ingredients for Pasta:
Guard Elbow Macaroni 2 cups
Water (for boiling) as required
Oil (for boiling) 1 tbsp
Salt (for boiling) a pinch
Green capsicum (cube cut) 1 cup
Cabbage (cube cut) 1 cup
Red capsicum (cube cut) 1/2 cup
Carrots (cube cut) 1 cup
Oil (for cooking) 2 tbsp
Black pepper powder 1 tsp
Salt to taste
Chili garlic sauce 1 cup
Soy sauce 2 tbsp
Oyster sauce 2 tbsp
Worcestershire sauce 2 tbsp
Chili sauce 2 tbsp
Oregano 1 tbsp
Parsley (chopped) for garnish

Directions for Tikka Masala Preparation:
In a blender add cumin seeds, coriander powder, black cardamom, green cardamom, cinnamon stick, cloves, red chili powder, salt, turmeric powder, black peppercorns, paprika powder, orange food color and blend well. Your tikka masala is ready.
Directions for Chicken Preparation:
In a bowl, add chicken, oil, tikka masala and yogurt. Mix it well and marinate for 15-20 minutes.
Now in a pan heat oil and add marinated chicken. Cook for about 6-8 minutes or until chicken is cooked. Set aside.
Directions for Mayo Sauce Preparation:
In a bowl add mayonnaise, chili sauce, cream, sriracha sauce, white pepper powder, salt and mix well. Your Mayo sauce is ready, set aside.
Directions for Pasta Preparation:
In a pot, boil water and add oil, salt and macaroni. Boil until 80% done. Strain under cold water and set aside.
In a wok heat oil and add carrots, cook for 1-2 minutes. Now add green capsicum, cabbage, red capsicum and cook on high flame for 2 minutes. Now add black pepper powder, salt, chili garlic sauce, soy sauce, oyster sauce, Worcestershire sauce, chili sauce, oregano and mix well.
Now add boiled macaroni, mix well and cook on low flame for 1-2 minutes. Garnish with parsley and your Chicken Tikka Pasta Platter is ready.
Preparation time: 10-15 minutes
Cooking time: 20-25 minutes
