Ingredients: (Cake)
2 1/2 cups Flour.
2 tsp Baking powder.
1 tsp Baking soda.
1 3/4 cups Sugar.
1/2 cup Cocoa powder.
1/2 tsp Salt.
3 Eggs.
2/3 cup Buttermilk.
1 cup Coffee.
2/3 Vegetable oil.
1 tsp Vanilla extract.
Ingredients: (Chocolate fudge frosting)
1 1/3 cups Heavy cream.
1 stick Unsalted Butter.
1 cup Sugar.
4 squares Dark Chocolate.
2 squares Milk Chocolate.
1/3 cup Cocoa powder.
Recipe:
Preheat the oven to 350 F. Prep 2 8-inch pans with parchment paper and butter them.
Into a large mixing bowl, add flour, baking powder, baking soda, salt, cocoa powder and sugar. Mix it with a whisk. Add eggs. Start whisking. Add buttermilk. And keep mixing.
Slowly start adding coffee and mix until just combined and there are no lumps of flour visible. Add vegetable oil and vanilla extract. Mix until the batter is pretty runny and smooth.
Divide the mixture into two 8-inch pans. Bake for 30-35 minutes or until a toothpick comes out clean. Let it cool completely.
Start making the chocolate fudge. Add the butter, heavy cream, dark chocolate, milk chocolate, sugar, and cocoa powder.
Heat all the ingredients over medium-high heat. Mix constantly until the mixture is smooth and melted. Strain the mixture into a bowl. Cover the top with plastic wrap so that the plastic is directly touching the top. Fridge for 2-3 hours.
Remove the frosting from the fridge and assemble the chilled cake.
Slice the cake into halves. So you have 4 layers.
Top the first cake layer with the frosting and spread it evenly. Top it with the second layer. Repeat the process. Finally, frost the top and sides. Spread the frosting using an offset spatula. Enjoy.
