Cookie balls seem to be everyone’s must-have dessert to serve, and these easy dessert recipes will whip up delicious chocolate truffles in no time. Start out these quick desserts by lining a baking sheet with waxed paper and setting it aside for now. In a heavy, medium sauce pan, melt 12 ounces of semi sweet chocolate chips over low heat. Once the chocolate is melted, remove the sauce pan from the heat and stir in an 8-ounce package of softened cream cheese that you’ve cubed. Once you’ve finely chopped 8 ounces of miniature sandwich cookies with white filling, stir those into the chocolate mixture, as well. Use a small ice cream scoop to drop mounds of the truffles recipe onto the prepared tray. Cover and freeze them for 15 minutes until they’re firm. Time for the tasty chocolate coating! Melt 2-1/2 cups of milk chocolate and 2 tablespoons of shortening in a small, heavy-duty saucepan over low heat until the mixture becomes smooth. Line a separate baking sheet with waxed paper and use two forks to dip each of the cookie balls into the chocolate mixture, allowing the excess to drip back into the pan. Place the newly dipped balls back onto the baking sheet and chill for 30 minutes until the outside firms up. These easy desserts should be kept in the refrigerator for up to a week or in the freezer for up to a month, just make sure you allow them to sit at room temperature for 30 minutes before serving. With no oven time, these chocolate truffles are the ideal dessert to bring for a potluck!
