Chorizo stuffed roasted chicken cooked up in a wood fired oven. Now that is a great sounding recipe. Not only did it sound good this chorizo and rice stuffed chicken was one of the best fire roasted chickens I have ever had. If you have a wood fired oven or a wood fired pizza oven you need to get a chicken and roast it in that oven. The smokiness of the wood fired oven combined with the chorizo stuffed chicken makes for one fantastic meal. Chorizo Stuffing Recipe
8oz Chorizo Sausage cooked
1 cup White Rice
2 cups Knorr Tomato with chicken bullion
1/2 cup Peas and Carrots
1/2 cup Sauted onion
1/4 Bunch of cilantro, diced
TT Salt, Pepper and Garlic
Cook rice in bullion with onions, peas, carrots and salt and pepper to taste.
Bring rice to a boil, reduce to a simmer and cover.
Simmer for 20 minutes covered.
Mix cooked rice, sausage and seasoning.

Vegetables for roasting
Red potato
Yukon Gold potatoes
Sweet potatoes
Red onions
Baby carrots
Assorted mini sweet peppers
Cut vegetables into uniform pieces so they will cook evenly.
Coat with oil and season with fajita seasoning
Mix in 1/2 bunch diced cilantro
Mix 2 tbs of adobo sauce with 1tbs of olive oil and coat chicken well. Season chicken with fajita seasoning and stuff with rice mixture.
Place chicken on vegetables and add 1 cup tomato with chicken bullion and cook until center of chicken reaches 165 degrees
