INGREDIENTS:
4-5 lbs beef tenderloin ( can use prime rib or striploin roast)
1/2 cup butter, softned
4 cloves garlic, minced
2 Tablespoons Worchestershire sauce
2 teaspoons fresh rosemary, finely chopped
1 teaspoon black pepper
1 teaspoon kosher salt
2 Tablespoons course ground mustard
PREPERATION:
Preheat pellet grill to high heat. Cream together the butter, garlic, Worchestershire sauce, rosemary, salt, pepper and mustard. Pat dry tenderloin and cover completely with butter mixture, softly pressing to adhere. Let stand at room temperature for 30 minutes. Place tenderloin on grill grate. Roast on high for 15 minutes; reduce temperature to high smoke and smoke until internal temperature reaches 130 degrees F (for medium-rare) or to desired doneness. Remove from pellet grill and let stand 10 minutes before slicing.
