For this cooked i used my @meatermade to track my temps. This by far is the best chicken I have ever made on the rotisserie. I seasoned the chicken with my smokin buffalo blend, then I used some potato starch to help crisp up the skin. (Sub with corn starch). I set my #meatermade to 165. Once the #meater told me to remove the chicken I let it rest for 5 min before digging in. I made a delicious cilantro lime sauce with roasted garlic to go along with it. Who’s in?

1 whole head of garlic
1 bunch cilantro
1/2 cup sour cream
1 serrano
1 tsp black pepper
Juice of 1 lime
Salt to taste
