Cookout Potato Salad Recipe – This is a simple fast potato salad recipe for your next backyard bbq or patio cookout. The base recipe is infinitely variable, but the Dijon mustard and the horseradish add those subtle extra flavours that will keep people coming back for more.
Ingredients:
3 eggs, hard boiled
600g baby potatoes
15 – 30 mL (1 to 2 Tbsp) horseradish
3-4 green onions, thinly sliced
1 rib celery, thinly sliced
4-5 radishes, thinly sliced
75 mL (1/3 cup) mayonnaise
15 – 30 mL (1 to 2 Tbsp) Dijon mustard
5 – 10 mL (1-2 tsp) dry hot mustard powder
2 mL (½ tsp) celery seeds
30 mL (2 Tbsp) plain yogourt or sour cream
15 – 30 mL (1 to 2 Tbsp) vinegar
Salt and pepper, to taste
Method:
Hard boil, and the cool the eggs.
Cut up the potatoes into fork size bites, and boil until tender with the horseradish in salted water.
When cooked, drain the potatoes and season with salt and pepper, allow to cool.
Combine the dressing ingredients; mayo, Dijon, dry mustard, celery seeds, sour cream, and vinegar.
Slice up the hard boiled eggs.
Combine the potatoes, sliced veg, dressing, and eggs until evenly coated.
Place in the fridge a couple hours before serving.
