Today’s recipe is Saffron rice/pulao with chicken curry sauce. This dish is an inspiration from chef damu who represented this dish in cook with comali in recreation challenge. I have here given you the receipe of this yummy dish.

Saffron rice is prepared using very little spices and the preparation time is very less for this. This rice goes well with a spicy gravy either a veg or non veg. Here I have given a spicy chicken curry sauce for this.

Saffron is a one of the most expensive spices of India. It is available more in Kashmir. Chefs use this Saffron in very rich dishes as it gives a different aroma and taste to the dish.

Saffron also has many health benefits in it. It is powerful antioxidant, has a lot of cancer treating properties and treats mood swings and many more. A pinch of Saffron is enough to improve the flavor and color of the dish.

Ingredients:

Chicken curry sauce:

Chicken – 1/2 kg
Onion – 2 nos
Tomato – 3 nos
Green chillies – 2 nos
Ginger garlic paste – 2tbsp
Kasa kasa – 1tbsp
Cashew – 10 nos
Curd – 3tbsp
Kashmiri red chilli powder – 1 tbsp
Garam masala – 1.5 tsp
Fennel powder – 2tsp
Salt as required

Saffron rice/pulao:

Basmati rice – 400g
Onion – 2 nos
Green chillies – 2 nos
Bay leaves – 3nos
Cashew nuts – 10 nos
Mint leaves – 1 cup
Coriander leaves – 1 cup
Ginger garlic paste – 2 tbsp
Salt as required
