1 large chicken breast, cut into thin pieces and pounded out to even
thicknesses
2oz cream cheese, softened 1/4 cup plain Greek yogurt
1/3 cup chopped artichoke hearts
1/3 cup sautéed spinach
1/2 cup shredded mozzarella cheese
2 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper 1 cup milk of choice (I used nutpods)
1. Season both sides of chicken with Italian seasoning, salt and
pepper. 2. Combine all remaining ingredients in a mixing bowl and stir well
until a sauce forms.
3. Heat 1 tbsp avocado oil in a pan over medium heat. Add chicken and cook for 2-3 minutes on each side, or until cooked through. Remove chicken from the pan.
4. Add the sauce to the pan and stir to melt the cheese. Add more milk, as needed, to thin the sauce.
5. Add the chicken back to the pan and simmer for 5 minutes. Serve with favorite starch and veg
