I had a request to make Salt & Pepper Chicken and Salt & Pepper Chips. I thought both of those together would be a bit samey, so I decided to make Crispy Sesame Chicken Thighs instead. You would never claim either of these dishes as authentic Chinese – they are definitely adapted by Cantonese takeaways to suit local tastes.
