III. LOW CARB RHUBARB AND STRAWBERRY CRUMBLE 3:29
Servings: 4
Ingredients for the base layer:
2 cups strawberries
1 cup rhubarb
2 tbsp tapioca
juice of 1/2 lemon
1 tsp vanilla
Ingredients for the crispy layer:
1 cup almond flour
2 tbsp tapioca flour
3 tbsp coconut oil
1/4 cup raw walnuts
1/4 cup raw almonds
Instructions:
1. Preheat the oven to 180 C (with a fan) on both sides.
2. Finely chop the rhubarb and strawberries. Add the vanilla. Mix them with tapioca flour and lemon juice. Stir.
3. Pour into a ceramic or baking tray. Bake it and at the same time make the crispy layer.
4. Mix the almond flour, tapioca, nuts and coconut oil. Stir.
5. Pour the crispy layer over the base. Finish baking until the top layer is golden and the base is completely cooked.
My advice is to wait for the base layer to cook before adding the crispy one, because the top layer doesn’t take longer. If it is baked more than necessary, it can burn quickly.
Serve it with coconut yogurt. Sprinkle with more nuts.
