Delicious Chicken Ngoh Hiang Recipe – with Benja Chicken

Ngoh Hiang is the perfect dish you can make to wow your guests for Chinese New Year! This ngoh hiang is based on a Penang Lor Bak recipe that I learnt from a Penang Chef!

For this recipe, I substituted Benja Minced Chicken in place of minced pork as a healthier alternative. Benja Chicken has been lab proven to be 55% juicer than regular chicken and results in a tender and moist ngoh hiang! Make sure you use Chinese leeks as shown in the video as this is the key to its unique flavour!

INGREDIENTS:
– Benja Chicken Minced Chicken (2 x 300g)
– Chinese Leeks (2 stalks)
– Onions (2 medium bulbs)
– Beancurd skin – Egg (1) Seasoning
– Green Pea Powder (2 Tbsp)
– Corn Flour (3 Tbsp)
– Five Spice Powder (1 tsp)
– White Pepper (1/2 tsp)
– Salt (15g) – Sugar (50g)
– Chicken Stock Powder (1 tsp)

METHOD
– Remove Benja Chicken Mince from packaging into a large mixing bowl
– Wash Chinese Leeks thoroughly to remove any sand
– Chop up Chinese Leeks and Onions into fine pieces
– Add leeks, onions and all seasoning to the chicken mince
– Mix in the same direction
– Cut beancurd skin to 17cm lengths
– Place 2 scoops of meat filling on beancurd skin
– Roll tightly and press down the sides
– Heat oil to 140 degrees celsius and fry until golden brown

Serving Suggestion:
Slice into bite-size pieces, garnish with some cucumbers and serve with your favourite chilli sauce
