A popular form (or variety) of chicken which is not farmed in mass especially through professional farms. That is called as Desi Murgi where desi stands for local variety. Price-wise much on the higher side; texture and look-wise a bit rough and hence take more time to properly cooked. Desi chicken is loaded with earthy and raw flavors.

► Ingredients:
1 kg Country Chicken
For Marination
1 small onion paste
1/2 inch ginger+12 garlic cloves + 5 green chillies =paste
1 tsp turmeric powder
1 tsp Kashmiri mirch powder
1 tsp black pepper powder
1 tbsp lemon juice
1.5 tsp salt for 1 kg chicken
2 tbsp mustard oil
For Masala Paste
1 tbsp coriander seeds
1 tbsp cumin seeds
1 tsp sesame seeds
4 Dry Red chilli
Mace( javitri) small amount
1 tsp poppy seeds
4 tbsp Cooking
2 bay leaf
2 cinnamon
2 cardamom
2 medium chopped onions
1/4 tsp sugar
Salt as per taste
One Tomato
1 tbsp ghee
1/2 tsp garam masala powder
