Oven Roasted Herb Chicken
4 lb Chicken – cleaned & dried
1/3 C Olive Oil
3 – 4 Cloves Garlic – minced
1 tsp Oregano
1 tsp Parsley
1/2 tsp Thyme
1/2 tsp Dill
1 tsp Salt
1/2 tsp Pepper
2 Lemons – juiced
In a small bowl mix olive oil, garlic, oregano, parskley, thyme, dill, salt &
pepper. Add juice of 2 lemons.
Place the chicken in a baking dish and place the lemon halves inside the chicken cavity. Brush
the marinade onto the chicken cover completely. Place 1 cup of water in the bottom of the
baking dish if needed.
Bake @ 400 F for 60 – 70 minutes or until the internal temp reaches 165 F
