INGREDIENTS
1 1/2 to 2 lbs precooked shredded chicken
8 cups low sodium chicken broth
1 medium carrot finely chopped
1/2 small onion finely chopped
1 celery stalk finely chopped
2 cloves garlic minced
1 dried bay leaf
4 Tbsp unsalted butter
1/4 cup all purpose flour
salt and pepper to taste
DUMPLINGS
2 1/2 cups all purpose flour
2 1/2 tsp baking powder
1 1/2 tsp salt
12 oz can evaporated milk
INSTRUCTIONS
– In an 8 quart pot add butter, onion, celery, carrot, a pinch of salt and pepper and on a medium heat sauté until softened and translucent
– Now add minced garlic and continue to sauté
– Add bay leaf and sprinkle in flour, cook until light crust forms at the bottom of the pot. It should take a minute or so using a medium heat setting
– Next add and stir in chicken broth
– Then add cooked shredded chicken and simmer for ten minutes
PREPARE DUMPLINGS
– In a large bowl add flour, baking powder, salt and combine well
– Now add evaporated milk and mix
– With a spoon scoop in dumplings to boiling broth, cover with a lid and cook for 10 to 15 minutes or until dumplings are cooked, fluffy and floating to the surface
