Chicken Barra Tikka:
Ingredients:
2 chicken breasts, cut into thick slices
1 tsp salt
½ tsp lemon juice
2 green chilies, finely chopped
1 tsp ginger paste
1 tsp garlic paste
2 tbsp finely chopped coriander
¼ cup yogurt
1 tsp Kashmiri chili powder/ paprika
1 tsp chaat masala
1 tsp kasoori methi (dried fenugreek leaves)
¾ tsp black pepper
1 tsp garam masala
3 tbsp fried onions, crushed
1 tsp ghee (for smoking)
1 piece of hot charcoal
1 tbsp ghee (for frying)
Instructions:
In a bowl, combine chicken slices, salt, lemon juice, green chilies, ginger paste, garlic paste, and chopped coriander. Mix well.
Add yogurt, Kashmiri chili powder, chaat masala, kasoori methi, black pepper, garam masala, and crushed fried onions. Mix thoroughly.
Create a small hole in the middle of the mixture. Place a hot charcoal in a non-reactive cup and put it in the hole.
Pour 1 tsp of ghee over the hot charcoal and cover the bowl for 2 minutes to let it smoke.
After 2 minutes, remove the lid and stir the marinated meat well. Allow it to marinate for an additional 10-15 minutes.
Heat up a cast-iron pan and add 1 tbsp of ghee. Fry the chicken pieces for 2-3 minutes on each side over medium heat. Your Chicken Barra Tikka is ready!
Taher Rice:
Ingredients:
3 cups Basmati rice, washed
10 cups water
2¼ tsp salt
1¾ tsp turmeric powder
2 tsp mustard oil
Instructions:
In a large pot, add the washed Basmati rice and water.
Season with salt; the water should taste salty.
Add turmeric powder and stir.
Cover the pot with a see-through lid and bring to a boil. Be cautious; it may overflow.
Once boiling, remove the lid and cook until the rice is tender, around 7-8 minutes.
Drain the rice well.
In a separate pan, heat 2 tsp of mustard oil until warm. Pour this over the rice and mix well.
Your Taher Rice is ready!
