I am sharing a a quick and easy chicken cutlet recipe for any time snack. I have added vegetables for better nutritive value. These can be frozen or made ahead. Adding rice makes these super soft and melt in the mouth.
This will make 12 cutlets enough to serve 4
INGREDIENTS
MINCED CHICKEN 400 GMS
POHA ( FLATTENED RICE) 1 CUP
SUBSTITUTE: BREAD CRUMBS OR COOKED MASHED RICE
MAYONNAISE ¼ CUP
GARLIC PASTE 1 TABLE SPOON
GRATED GINGER 1 AND ½ TABLESPOON
BOILED PEAS ½ CuP
GREEN CHILLIES 2
MINT LEAVES 2 TABLE SPOON
CORIANDER LEAVES 2 TABLESPOON
ONION ½ CUP
SPRING ONION LEAVES ½ CUP (OPTIONAL)
DRY SPICES
RED CHILLI POWDER 1 TSP
GARAM MASALA ½ TSP
CUMIN POWDER ½ TSP
CHAAT MASALA 1 TSP
SALT 1 AND ½ TSP (TO TASTE)
FOR COATING
WHOLE EGG 1
WHOLE WHEAT BREAD CRUMBS 1 CUP
OIL FOR SHALLOW FRY 2 TABLE SPOON
