Ingredients:
Chicken 450gm
Shallots crushed 10-15
Chilli flakes 2 – 4 tbsp (as per your spice level)
Ginger – garlic crushed 1 tbsp
Curry leaves
Salt
Method:
– Heat a pan, add oil.
– Once the oil is hot, add in the crushed shallots and sauté for a few minutes. Instead, you can use crushed Onions, but shallots makes it tastier.
– Then add crushed ginger-garlic & curry leaves, sauté until raw smell goes.
– Add chilli flakes.
– Sauté everything until onion turns golden brown and fragrant.
– Add chicken and mix everything well.
– Cover the lid and let it cook for about 10 – 15 minutes, stir in between.
– Add salt to taste and mix well.
– Keep stirring occasionally.
– Once the water is released from the chicken, remove the lid.
– Let it simmer for few minutes until the water has evaporated.
– At this stage, you can add more curry leaves.
– Mix well and stir continuously until everything is roasted and dark brown in color.
– Serve this as a starter, or goes well with rice and dal.
