Today, I will show you an easy way to achieve tender savory chicken tamales. Making tamales is always a labor of love. There are many steps and it takes hours of time, but bringing the family together is worth it. Some make tamales to share and celebrate the holidays with family and friends. Some sell tamales to support their livelihood. With that said, this recipe can be doubled, tripled, and quadrupled should you need to make a large amount. I am more than sure there are hundreds of ways to make tamales and everyone has a family recipe. This is just a simple way to make them. I tried to simplify it for the beginner cook or those who want to easily make tamales at home.

INGREDIENTS
50 cleaned & softened corn husks
2 1/2 to 3 lbs prepped chicken
prepped masa
16-quart steamer pot
2 liters of water for the bottom of the steamer pot
*Chicken*
5 lbs boneless chicken breast or thighs
4 1 /2 cups water
2 Tbsp chicken bouillon powder
2 tsp onion powder
2 tsp garlic powder
1 1/2 tsp ground cumin
1 tsp black pepper
10 to 12 dried guajillo chiles (stems and seeds removed)
8-quart Slow Cooker
(cook on high for 4 to 4 1/2 hours)
*Masa*
4 1/2 to 5 cups (1 L to 1.2 L ) broth
1/3 cup chile puree
4 cups instant corn flour (I used Maseca brand)
2 1/2 tsp salt
2 1/2 tsp baking powder
8 oz (227 g) lard or shortening
16-quart steamer pot
*Puree*
12 prepped & softened guajillos
1 1/2 cups broth
*Meat Filling*
2 Tbsp cooking oil
1 cup or more of chile puree
3 lbs shredded cooked meat
salt and season to taste
