Ingredients
⁃ 1 whole chicken, cut into pieces
⁃ 12 cups of water
⁃ 1 bunch of celery, chopped
⁃ 2 carrots, chopped
⁃ 3 small red onions, chopped
⁃ 5 cloves of garlic, sliced
⁃ 1 bay leaf
⁃ 4 green chillies
⁃ salt and olive oil, to taste
Method
1. Add the chicken and water to a large pot and let it simmer for 30 minutes
2. Sauté the onions and garlic in some olive oil
3. Add the bay leaf, carrots and celery and season with salt
4. Sauté the vegetables and once they start to get soft, add the veggies to the chicken and water
5. Mix it through and add green chillies and salt before simmering on low heat for about 1 hour
6. Remove the chicken bones and any large chunks of chicken and shred it
7. Add the shredded chicken to the soup and stir
8. Enjoy!
