Hello foodies welcome to Avante Garde kitchen. Today’s special is Spicy Chilli Chicken.
chinese recipe, Chilli Chicken is one of the most popular Indo-Chinese style chicken appetizer or starter. This delicious chicken recipe is very popular in Chinese restaurants but with this easy recipe you can make it at the comfort of your home according to your own taste.
Ingredients:
Whole chicken – 1no. (800g to 1kg)
Star anise whole – 1no
Cinnamon stick – 1no
Orange – 1 no
Soy sauce – 15 g / 1tbsp
Ginger – 5g
Cloves – 5no
Fennel powder – 5g
Garlic – 5 cloves
Dry red chilli 100g
Cornflour – to dust
FOR SAUCE
Oil – 30 ml
Garlic – 3 cloves
Dry red chilli – 3 no
Chopped onion – 1no
Cooked chilli paste
Red bell pepper – 1no
Yellow bell pepper – 1no
Chicken stock – 300 ml
Soy sauce – 15 g / 1tbsp
Vinegar – 15g / 1tbsp
Ketchup – 15g / 1tbsp
FOR GARNISH
Roasted peanuts
Roasted sesame seeds
Chopped scallions
Cooking Instructions:
1. In a stock pot add cold water.
2 . Add your whole spices and aromatics
3.Add whole chicken boil and reduce to a simmer for 15minutes , and cover the lid simmer for another 15 minutes
4. Let the meat cool outside for 20 minutes.
5. Shred it by hand and dust in cornflour , deep fry and set aside.
Meanwhile
6. Blend the red chilli and cook it out in oil
in the wok
7. In a wok , Add oil, garlic , dry red chilli , and onion and sautè on high.
8. Add red chilli paste to the same , once done add your bell peppers and toss.
9. Add the chicken stock from before and reduce by half.
10. Finish it off with soy sauce , vinegar and ketchup .
11. Garnish with peanuts , sesame seeds and scallions .
