According to Wikipedia, three cup chicken (3 cup chicken) or sanbeiji 三杯鸡 originated from Jiangxi province of southern China but became especially popular in Taiwan. I guess that’s why many people thought this is a Taiwanese dish. Oh well at least i did. The dish derives its name from the three cups of sauces required as ingredients. For each chicken, a cup each of soy sauce, rice wine (usually mijiu although it may be mixed with Shaoxing jiu), and sesame oil are added. However, ours have been modified to suit our taste buds.

Ingredients
Serves 4
2 chicken thighs
2 tablespoons sesame seed oil
3 tablespoons dark soya sauce
3 tablespoons Chinese cooking wine – Huatiao jiu
I bulb of garlic
3 bulbs of shallots
A handful of sweet or Thai basil leaves
1 thumb size ginger
1/2 teaspoon sugar
Some white pepper to taste
