**RECIPE FOLLOWS**
Learn how to make Greek Salad! This recipe is so simple, it only takes a couple minutes to whip together and it turns out so crunchy, herbaceous and delicious! With the briny feta and olives, this salad is a real winner. It could be eaten as a light meal or as a side to something like my Greek Chicken (linked at the end of video.) Greek salad
Serves 3-4
9 oz seedless cucumber, sliced
12 oz tomato, diced
½ red or green bell pepper, diced
¼ red onion, sliced
2 T dill, parsley and/ or basil chopped
1 T olive oil
2 T red wine vinegar
1 t dried oregano
½ t dried parsley (optional)
¼ c kalamata olives, halved
2-3 oz feta, crumbled
Salt and pepper to taste
In a large bowl, combine all ingredients except for feta and mix to combine. Serve immediately or chill until ready to serve to let flavors mingle. When you’re ready to serve, crumble feta on top. Enjoy!
