EASY SUMMER PASTA SALAD

INGREDENTS:
1 lb. pasta, either Rotini or Penne
1 cup cherry tomatoes, halved
1 cup fresh spinach, torn
1 8oz container fresh mozzarella pearls
1 10oz jar mild roasted red peppers
4oz sun dried tomatoes, drained
1/2 cup kalamata olives (optional)

FOR BASIL PESTO:
2 cups fresh basil leaves, packed
2 cloves fresh garlic
1/4 cup cashews or pine nuts
1/2 lemon, juiced
1/2 cup parmesan cheese, grated
salt and pepper to taste
enough extra virgin olive oil to reach desired consistency, approx 1/4 cup

RECIPE:
1. Place large pot of water on high heat and bring to a boil
2. Meanwhile, in a food processor, combine garlic cloves, cashews, basil and lemon juice. Pulse for 10-20 seconds.
3. While food processor is on, slowly pour in olive oil until desired consistency, approximately 1/4 cup for this recipe
4. Add 1/2 cup grated parmesan cheese and salt and pepper to taste. Pulse for a few more seconds to incorporate
5. Once water has come to a boil, add a generous amount of salt, add pasta, give it a quick stir and cook 1-2 minutes longer than time on the box.
6. Carefully strain pasta and transfer to serving bowl. Allow to cool for few minutes.
7. Add 2/3 of the pesto and toss pasta until pesto is well mixed.
8. Add tomatoes, spinach, mozzarella pearls, sun dried tomatoes, roasted red peppers, kalamata olives (and/or any other item such as grilled chicken). Toss everything together.
9. Add remaining 1/3 pesto and toss. Chiffonade basil leaves or grate some parmesan cheese for garnish.
Serve immediately or refrigerate up to 4 days.
