In this video, I present 2 very easy to make dessert recipes that are very light to eat and are just perfect to start your new year. Hope you guys will like it. Ingredients for Recipe 1: No-bake cheesecake style dessert
For the crumble base:
1) 6-7 biscuits of your choice
2) 1 tsp vegan margarine or coconut oil (add some salt (1/8 tsp to the base if you are using coconut oil to balance the sweetness)
For the middle cheesecake layer
1) 250 ml of coconut milk
2) 3 tbsp cashew paste (in the video it shows 2. I added one at the last to make it creamier)
3) Sugar 3 tbsp (feel free to adjust as per your taste)
4) 1 tsp coconut oil (this helps the cheesecake layer to set in the freezer)
5) Lemon zest (from 2 lemons)
For top compote layer
1) 1/2 tbsp margarine or coconut oil (again add some salt about 1/8 tsp if using coconut oil)
2) 10-12 frozen or fresh strawberries (you can use any berries of your choice and adjust qty accordingly)
3) 1 tsp sugar
4) 7-8 drops of freshly squeezed lemon
The best part about this cheesecake dessert is that it can be served within 1 hour of preparation. They can be stored in the fridge for about 3-4 days.
Ingredients for Recipe 2: Carrot Halwa
1) 4 large carrots – peeled, washed, and shredded
2) 3 1/2 to 4 tbsp sugar (feel free to adjust the sweetness as per your taste)
3) 150 ml of coconut milk
4) cardamom powder from 2 pods of cardamom
5) coconut oil 1 tsp
6) roughly chopped nuts for garnishing
7) optional (1 tbsp of cashew paste to make it creamier and richer). Add this at the same stage you add sugar.
The carrot halwa tastes best when served fresh and warm. it stays good in the fridge for about a week. You can reheat it just before serving.
