This simple vegan Greek salad recipe can be made in matter of minutes. All you have to do is marinade firm tofu overnight in the fridge as a sub for the traditional feta cheese. We used extra virgin olive oil, lemon, oregano and crushed garlic for the marinade. Traditionally cucumber, black pitted olives, red onion and tomatoes are put together with the feta cheese, of course we used or delicious tofu instead. Serve with warm bread and other Mediterranean inspired vegan greek dishes.
