Hi Foodies! Ensaladang Talong or Grilled Eggplant Salad is a Filipino vegetable dish made with exactly three ingredients: Eggplant, onion and tomatoes. Filipinos usually tossed these ingredients in alamang (shrimp paste) or bagoong (anchovy sauce) and usually topped with salted duck egg. Though it is usually considered as a side dish to anything fried such as pork chops or fried fish, there is no harm in serving it as a standalone viand with warm rice.
