Today I am doing a Dessert Collaboration with my Friend Akshata from Akshata’s Recipes. I have no idea what Akshata’s making but it’s going to be Amazing! For our Collaboration, I am making White Cupcakes with a Strawberry Glaze and my Friends, these will be the best Cupcakes you’ll ever had! These are the Bomb dot com moist, fluffy, bursting with Strawberry Goodness, and out of this world delicious…Taste like you made them from Scratch! Great to make with Kids also makes a great Back To School Snack!

Baker’s Note: This Recipe makes up to 24 cupcakes. You may cut back on the Strawberry Glaze..Use 2-2/12 cups powdered sugar and 1/3 cup puréed strawberries
Cupcakes
1 (15.25 oz) box white cake mix
1 (8 oz) carton mascarpone cheese, softened
1 cup evaporated milk
2 jumbo egg whites, room temperature
1/4 cup canola oil
1 tsp vanilla extract
1/2 tsp almond extract
Strawberries, for garnish
Strawberry Glaze
1 (16 oz) box powdered sugar, sifted
1/2 cup puréed strawberries (use thawed frozen strawberries)
Preheat Oven to 350 Degrees
In a large bowl with a hand mixer, add mascarpone cheese, egg whites, and canola oil; mix until well combined and creamy. Next add cake mix, evaporated milk, vanilla and almond extract; blend until thick, fluffy, and well combined. Using a ice cream scoop, scoop cake batter 3/4 way up into 12 cupcake liners onto cupcake pan. Bake for 15-20 minutes until golden brown. Set aside, cool completely and place on cake stand and add strawberry glaze on top and serve. Garnish with strawberries.
Strawberry Glaze
Place frozen strawberries into a blender and purée oh high. In a medium bowl, add powdered sugar and puréed strawberries. Stir until well combined.
